Concept · Fries

The trailer for your fries food truck.

Fryers under a real hood, the cold right next to them, a counter that handles the Saturday night queue: for fries, chips or fish and chips, the Chef+ is made for it.

A cook serving a customer from his food truck trailer

A trailer made for fryers.

  • Fryers under the hood

The lowered cooking area, 126 × 60 cm at 55 cm high in AIR 220, puts them at the right height, right under the extraction.

  • Extraction sized for it

The hood covers the cooking area: 130 cm in AIR 220, 180 cm in BOLD 270, with removable stainless steel filters.

  • The cold right next to them

Double-door refrigerated counter, 150 cm, from 0 to +5 °C: sauces, toppings and drinks at hand.

  • Gas bottle box as an option

On every model; the gas installation and its inspection are done by a qualified professional in your country.

The layout you need: the Chef+.

Our hot-food layout: extraction hood, lowered cooking area for the fryers, refrigerated counter, gas bottle box as an option.

Gas or electric fryers.

  • Gas fryers

They heat up fast and hold their temperature in the rush, with no socket needed. We supply the gas bottle box as an option; a qualified professional in your country installs the gas.

  • Electric fryers

No gas, but several kilowatts each: you need a well-powered pitch or a strong generator. The Chef+ runs on 230 V single phase as standard; for 400 V, ask us.

Two fryers to start.

  • In AIR 220

One fryer for the first cook, one for the second, side by side on the 126 cm cooking area.

  • In BOLD 270

180 cm of worktop under 180 cm of hood: room to line up more fryers and work as a pair.

Running a chip service.

What keeps a chip van going: a short menu, freshly cut chips and a trailer that stays clean.

  • Freshly cut chips

Peeled, cut and washed in the morning, then a first cook at a low temperature, ahead of service.

  • The second cook

At service time, in small batches, below 175 °C as EU rules require: crisp chips and fast service.

  • Sauces and toppings

On the refrigerated counter, next to the hatch: you serve without turning round.

  • The oil

Skimmed often, filtered every day, changed regularly, then collected: it never goes down the drain.

Where a fries food truck works.

  • Business parks

At lunchtime, on weekdays: the most regular customers.

  • Outside stadiums and venues

In the evening, with the venue manager’s agreement.

  • Markets, fairs, festivals

Ask the market manager or the organiser for a pitch.

  • A regular pitch

In the evening, with the local authority’s permission, in towns without a chip shop.

In the European Union

What applies to your concept.

EU rules that apply to your concept in every member state, each with its official source, checked on 6 October 2026. Your country adds its own: check them with your local food safety authority before you start.

  • Acrylamide

EU rules for fries: fry below 175 °C and as low as possible, skim the oil often, store raw potatoes above 6 °C, and wash and soak, or blanch, cut chips before frying; for frozen chips, follow the cooking instructions. The regulation also recommends a colour guide on display where you fry.

  • Hygiene on board

For mobile sales vehicles, EU hygiene law asks for facilities to wash and dry hands hygienically, food-contact surfaces that are easy to clean and disinfect, and enough hot and/or cold drinking water. At Food Truck Store: double sink as standard, hand-wash basin with hot water as an option.

  • Allergens

For food sold unpacked, you must tell customers which of the 14 listed allergens your food and drinks contain: for example cereals containing gluten in the batter, fish, and eggs and mustard in the sauces. Your country sets how you give this information.

  • Gas

Gas appliances carry the CE marking under EU rules; the installation in the trailer, its checks and who may work on it are set by each country. We supply the gas bottle box as an option on every model; a qualified professional in your country installs and inspects the gas.

Why a trailer.

  • A car licence is enough

The AIR 220 format has a gross weight of 750 kg: you tow it behind your car on a category B licence, as long as your car is rated to tow it.

  • One point of contact

Food Truck Store, or our distributor for your country, answers your questions, by video call too, and prepares your quote.

  • Ready to serve

Fibreglass shell, stainless steel, double sink, fuse box, European Certificate of Conformity: you get a working tool, not an empty shell.
